Lokkesmoe Swedish Thin Pancakes
2 Eggs
2 Cups whole milk
1 1/2 cups flour
1 T sugar
1 t salt
Mix egg and milk to make a smooth batter. Add flour, sugar, salt. Use 7″ crepe pan, well buttered scoop 1/4 cup of batter into hot pan, twist quickly to cover bottom of pan and fry to golden brown, turn. Serve rolled with lemon juice and powdered sugar or strawberry filling!
Strawberry Filling
1 tbsp butter
1 cup strawberry (frozen)
1 tbsp cold water
1/4 tsp cornstarch
4 tsps sugar
1 pinch salt
1/2 tsp ground cinnamon (optional)
1/4 tsp vanilla (optional)
1 In a pot, melt butter on medium heat.
2 Put in frozen strawberries.
3 Dissolve cornstarch in cold water, add to pot.
4 Add sugar and salt.
5 Stir and turn heat down to low-medium.
6 Allow to simmer until strawberries are soft.
7 Smoosh strawberries.
8 If you’d like a thicker consistency, allow to simmer on low heat, uncovered.
9 Remove from heat and allow to cool for one minute.
10 Add cinnamon and vanilla.
11 Wrap in crepes. Make beautiful with fresh strawberries and powdered sugar or whipped cream.
